Microwave Meals: Egg Scramble

Some mornings, you're just craving something hearty, but you lack the time and/or motivation to heat up a pan and make a full meal. This recipe is your answer. All you need is a coffee mug and a couple eggs with water or milk. From there you can add whatever you have around the kitchen to make a quick yet satisfying egg scramble on the go. Cook Time: 10 minutes
Total Time: 15 minutes
Servings: Makes 1 coffee mug serving
Ingredients:
2 eggs
1 tablespoon milk or water
Shredded cheese (I used mozzarella)
Sliced ham, bacon or turkey (optional, for those veggie-lovers)
Chopped onion
Chopped red bell pepper

Directions:
1. Mix eggs and milk in a coffee mug and microwave for 1 minute to partially cook eggs.

2. Add desired meat, cheese and veggies.

3. Microwave for another 30 seconds to 1 minute to melt cheese and thoroughly cook eggs.
