What's The Difference Between Green, Yellow, And Red Bell Peppers?

Green, yellow, and red peppers are all from the same plant, but become different colors during their stages of development. Green is the unripe version, while red is the most mature, and although they all come from the same plant, the different stages of ripeness give each version a distinct flavor, color, and composition.
Green peppers are famously bitter and deliver a grassy, vegetal flavor that can be a great complement to sweet or rich dishes, according to Ask The Food Geek. Red peppers are sweet, juicy, and citrusy, and yellow and orange peppers also taste somewhat fruity and sweet, though less in comparison to ripe red peppers.
According to Web MD, red peppers have the most nutrients, but all bell pepper varieties are a great source of potassium, fiber, folic acid, Vitamin A, and immunity-boosting Vitamin C. Adding any type of bell pepper to your diet has been shown to help reduce the risk of developing heart disease, cancer, high blood pressure, and type 2 diabetes.
